How can I know the final drive ratio of my bike?

not sure I understand your

not sure I understand your question. Didn't you open your final drive in order to restore it? I assumed this from previous questions. If yes, count the teeth of both gears.
If not, and I assume you're talking about an R51 (your signature), then you make a mark on your rear wheel and another mark on the flange of your drive shaft (transmission side). You then turn the rear wheel (bike on the main stand) exactly one turn and count the turns of the drive shaft. Voila, you got the ratio
